Berry Peach Pie

This pie was so easy to make, and so unbelievably good that i just have to share!

“Berry Peach Pie”

3 1/2 cups Frozen organic wild blueberries

1 cup Frozen organic peaches

1/2 cup Fresh organic strawberries(i’m sure you could use frozen here too, but i had fresh on hand)

3/4 cup sugar

2 TBS.  cornstarch

2 TBS.  flour

Pastry dough for 9″ double pie crust (I used a frozen store bought)

2 TBS of strained juice

1/2 tsp. cinnamon

Preheat oven to 400 degrees.  Combine sugar, flour, cornstarch, and cinnamon in a separate bowl, set aside.  Rinse blueberries in cool water to slightly thaw. (Reserve 2 TBS. of the liquid)  Defrost peaches in microwave, then slice into bite size pieces.  Clean and slice strawberries.  Combine dry ingredients and fruit mixture.  Stir until mixture is well blended while adding the reserved blueberry liquid.  Pour into pie plate lined with dough.  Top with remaining pastry dough and crimp edges.  Brush edges and top with cold water.  Sprinkle with sugar and vent the top crust.  Bake 40-50 minutes or until filling begins to bubble.

TIP:  be sure to place pie plate on a cookie sheet before baking in case it bubbles over!
